Probably Shouldn't Distillery was born from defiance by owners Mariah and Shawn Butenschoen.
After being told they "probably shouldn't" certify their Breckenridge Blueberries farm as organic, they embraced the phrase for their new venture.
The couple decided to turn their excess fruit into small-batch spirits, but the path wasn't easy.
It took a grueling five-year marathon of paperwork and permitting before they could finally open their doors in 2017.
Their products are a true celebration of local agriculture.
It takes nearly 20 pounds of their own organic blueberries for a single bottle of brandy, and they source barley directly from Skagit County.
While facing immense competition from corporate giants, the distillery remains fiercely independent.
The Butenschoens have no investors and no debt, creating a business that reflects the hard work and agricultural richness of Everson.
